Coconut cake cubes – a classic homemade cake coated in coconut, almonds, or nuts.

Some baked treats don’t need fireworks. The aroma of butter, cocoa, and warm cake is enough for the kitchen to instantly turn into the center of household negotiations: “Who gets the last piece?” Coconut cake cubes belong exactly to that category. Simple, straightforward, honestly sweet. These are not delicate sponge cakes with cream that requires a pastry degree to master. This is a cake you bake, cut into cubes, dip in glaze and… coat in whatever you happen to have on hand.

The name “coconut cake cubes” comes from the fact that they are most often rolled in shredded coconut, but that’s only one option. Almond flakes or finely chopped nuts work just as well. Each version brings a slightly different character, yet the base remains the same: soft, buttery cake and a rich cocoa glaze with a distinct hint of homemade liqueur.

It’s a recipe that perfectly reflects the philosophy of paczekwmasle.pl: no rush, no unnecessary complications, just good ingredients.

How to Make Coconut Cake Cubes Step by Step

1. Preparing the Cake

Beat the eggs with the sugar and vanilla sugar until the mixture becomes light and fluffy. Add the liquid honey and mix for a moment longer until everything is well combined. Then add the softened butter and mix it in thoroughly.

Sift the flour together with the baking powder and add it gradually to the mixture, alternating with the milk. Mix everything until you obtain a smooth, fairly thick batter.

2. Baking

Line a 30 × 40 cm baking pan with baking paper. Pour the batter into the pan and smooth the top.

Bake at 180°C (356°F) for 20–25 minutes, using bottom heat.
The cake should be light golden in color and slightly springy to the touch.

Once baked, set the cake aside and allow it to cool completely.

The Glaze That Makes All the Difference

Melt the butter in a saucepan, then add the sugar, milk, and cocoa powder. Heat over low heat, stirring constantly, until a smooth and glossy glaze forms. Remove from the heat and add the alcohol. Adjust the amount to your taste. 50 ml will give a subtle hint, while 100 ml will make the flavor more pronounced.

It’s worth using a homemade liqueur here. Cherry or raspberry liqueur adds depth to the glaze and a light fruity acidity. If you make your own liqueurs, be sure to check out this post about homemade infusions. Using homemade alcohol in desserts takes the flavor to a completely different level:

Assembling the Coconut Cake Cubes

Cut the cooled cake into even cubes. Dip each piece thoroughly in the warm cocoa glaze, then coat it in your chosen topping:

  • Shredded coconut – the classic and most recognizable version

  • Almond flakes – more delicate with a light crunch

  • Nuts – richer and more intense, perfect for those who enjoy bold flavors

Place the finished coconut cake cubes on a wire rack or baking paper and leave them until the glaze sets.

Why Do Coconut Cake Cubes Always Disappear First?

Because they combine everything we love about homemade sweets:

  • they are soft on the inside,

  • they have a rich cocoa glaze,

  • they are easy to modify with different coatings,

  • and they store well and are easy to take with you.

They are also the perfect cake for coffee, for the road, or when unexpected guests arrive.

Coconut Cake Cubes – A Recipe You’ll Want to Come Back To

They don’t pretend to be anything more than they are. Homemade coconut cake cubes are a flavor that stays with you: buttery, cocoa-rich, with a light hint of coconut. Once you make them, they earn a permanent place in your recipe notebook. After that, it’s only small variations: a different coating, a different liqueur, a different day of the week.

And that’s exactly the point. 🍰🥥
