Zucchini is one of the most versatile vegetables in the kitchen: mild, light and easy to pair with all kinds of ingredients. It is also a particularly healthy vegetable, rich in fibre, potassium and vitamin C, yet very low in calories. According to Poland’s National Centre for Nutrition Education, zucchini supports healthy digestion and is an excellent choice for anyone who wants to eat light, varied meals.
As the National Library of Medicine (MedlinePlus) also notes, vegetables such as zucchini are low in calories while providing valuable vitamins and minerals, making them an important part of a healthy diet (medlineplus.gov). Research indexed in PubMed (NCBI) indicates that carotenoids found in zucchini, including lutein, beta-carotene and zeaxanthin, have strong antioxidant properties, help protect cells from damage and may play a role in preventing chronic diseases (pubmed.ncbi.nlm.nih.gov).
Today, I am sharing a recipe for a zucchini wrap: a tasty, healthy alternative to traditional tortillas or crêpes. It is equally good as a warm snack or a cold lunch to take to work.
Ingredients
1 medium zucchini (ideally young, with a thin skin)
150 g grated cheese (a semi-hard cheese or mozzarella)
2 tablespoons toasted sunflower seeds
a few sun-dried tomatoes in oil
2 tablespoons spreadable cream cheese, such as Almette
salt, pepper and paprika
your favourite herbs and seasonings, such as oregano, basil or granulated garlic
Step-by-step method
Prepare the zucchini
Wash the zucchini and cut it into thin slices, either round, diagonal or lengthways. If the skin is thick, peel it first.Arrange the slices on a baking tray
Line a baking tray with baking paper and arrange the zucchini slices in an overlapping layer, like roof tiles. Sprinkle with salt, pepper, paprika and your favourite seasonings.Add the cheese and bake
Scatter the grated cheese evenly over the zucchini. Bake in an oven preheated to 180°C for about 30 minutes, until the zucchini is tender and the cheese is lightly golden.Make the filling
Meanwhile, blend the sun-dried tomatoes with the toasted sunflower seeds to make an aromatic, intensely flavoured paste.Fill the wrap
Carefully turn the baked zucchini layer over so that the cheese is underneath. It forms a flexible outer layer that holds everything together. Spread the cream cheese over the zucchini, then add the tomato and sunflower seed paste.Roll it up
Roll everything up fairly tightly to form a wrap. Serve it warm, when the cheese is deliciously stretchy, or cold as a healthy lunchbox snack.
What about the cheese?
I use a semi-hard cheese or mozzarella because they form the flexible layer that makes the wrap easy to roll. Cheese also adds protein and calcium, so it is worth keeping some in the recipe.
If you would like to reduce the calorie content, you can use reduced-fat mozzarella, try a plant-based cheese or halve the amount. The wrap will still work and will be a lighter option.
Why give this recipe a try?
A zucchini wrap is more than an interesting alternative to a traditional tortilla: it is also a light, healthy meal idea.
Zucchini is low in calories and rich in fibre, vitamin C and potassium, supporting normal heart and digestive function.
Sun-dried tomatoes provide valuable antioxidants, including lycopene, which helps protect the body against free radicals.
Sunflower seeds provide healthy fatty acids and magnesium, which benefit the nervous system and muscles.
Cheese makes the wrap more filling and satisfying.
This dish is also a good option if you want to cut down on carbohydrates, as zucchini takes the place of bread or a tortilla.
You can also adapt the wrap to suit your taste:
a minced meat filling turns it into a more substantial main meal;
a vegetable filling, such as spinach, peppers or mushrooms, makes it lighter still;
ingredients such as feta, tuna or hummus offer even more possibilities.
It is a versatile recipe that is easy to tailor to your diet and personal preferences.
